Travel to Italy this summer and dive into the food traditions at the heart of Italian identity. On this high school program, learn about sustainable food systems, and immerse yourself in Italian life and the country’s storied food culture. Then, experience the markets, restaurants, and secret neighborhood trattorie of Siena. Explore the many careers that touch the culture, art, and science of food. Work alongside organic farmers, meet acclaimed chefs, take cooking classes, delve into the science of baking, and try your hand at food criticism. Experience the journey from raw ingredients to finished feast. We stay at historic Italian farms throughout the program, in renovated buildings with 2-4 students in each room.
Program Highlights
Participate in hands-on farm rotations as you care for animals, plant, tend, harvest, can, and cook.
Learn basic knife skills or restaurant plating techniques from chefs and restaurateurs at trattorie and acclaimed ristoranti.
Discuss food policy, movements, and trends.
Learn the secrets of pecorino cheese-making and olive oil production.
